450 g (1 Lb) Frozen mixed fruit (plus thawed berries)
100 g (3 1/2 oz) Running honey
3 medium Egg Whites
450 g tub Greek style natural yogurt
A few Mint Leaves

      This yoghurt sorbet is amazing! With fresh berries, it is a dream to eat this. Especially in the winter season and during the Christmas holidays. Serve it on its own or pair it up with a slice of cake or a tart.

      To a 750 ml (1 1/4 pint) loaf tin line that with a cling film wrap. In a food processor whiz the fruits turning them into a puree. In a bowl then sieve them out, with the back of a spoon press the juices through. Stir in the honey into the berry juice.

      In a grease-proof bowl, whisk egg whites until peaks form, then fold the egg whites into the fruit juice & the yoghurt. In a tin pour the mixture in and freeze it for 4-5 hours. Stir the mixture again and then freeze it for another 4 hours or until the sorbet has solidified.

      Transfer the tin to the refrigerator for 20 minutes before you want to serve it. Turning the sorbet out of the tin, remove the cling film from it too. Scoop the sorbet out and serve with extra berries and mint leaves.
