Cut the vegetables into bite-size pieces. |

Then mix all of the ingredients in a bowl. |

After mixing the vegetables, the olive oil and the white wine vinegar with the chopped fresh herbs, let it marinate for at least 2-3 hours. |

After letting the vegetables rest in the marinade, put them up on skewers and then cook them on a pan with a bit of oil. After cooking them you'll have your vegan vegetable kebabs ready to be served. :) |
