Ingredients

1 kg (boiled and cubed) Potatoes

3-4 big ones (chopped into small cubes) Onions

2 (chopped) Spring Onions

5-6 twigs (chopped finely) Fresh Chives

1 cup Vegan Mayonnaise

2-3 Tbsp Vegan sour cream

6-7 Tbsp Natural Yogurt

2-3 Tbsp (to taste) Salt and Pepper
Directions
At times, you just need the basic things. Today is just the day for that. Say Yello to my vegan potato salad! Savoury, creamy and delicious, it honestly just needs 7 ingredients. In other words; whats not to love about it?

Boil the potatoes until they are soft enough to be cut into cubes. After boiling them for 20-25 minutes in boiling salted water, take them out and peel them. Then cut them into cubes once they are cool enough. Setting them aside. |

Chop the spring onions, the chives and the onions and set them aside. |

In a large bowl; mix the vegan mayonnaise, the vegan sour cream and the yogurt together. |

Toss the cubed potatoes, the onions, the spring onions and the chives in the mayonnaise mixture. Add salt and pepper to taste. |

Garnish with some more spring onions and chives on top. Serve. |
