Vegan Low Carb Vanilla Custard.

      This vegan vanilla custard is what will make your day! This eggless vegan version has such a creamy, rich and decadent texture; that even non-vegan people will love this as much as vegan people do! You can eat this with a slice of cake or on its own. 🙂

      In to a bowl, add in the cornstarch. Pouring over the cornstarch a little of the milk (about 200 ml), after adding the milk add the turmeric and stir well. After which keep this mixture on the side.

      Into a pan put the rest of the milk in, after which add the maple syrup. After mixing the milk and the maple syrup in add the mixture made before (the cornstarch and the milk one). Mix and stir well.

      Turn the stove on to medium heat. Stir the mixture continuously to avoid the cornstarch from getting lumpy.

      As the mixture begins to heat up, it will start to get thicker. More and more constant stirring is required at this point in time. You don't want your custard to be lumpy.

      Once the mixture is thicker, add the vanilla extract to the mixture. While continue to heat it for a few minutes more.

      Keep stirring until the mixture becomes smooth.

      Do not allow the mixture to boil, as then the mixture will burn/curdling of the custard.

      Remove from the stove and pour it into a container.

      Serve it cold or warm. It can stay in your refrigerator for the next 2-3 days.

      Note:

      You won't need to strain it if you keep stirring the mixture while it is on the stove, but just in case your custard does get lumpy strain it!
