400 g (14 oz) Strong white flour
1.5 Tsp Salt
1.5 Tsp Ground mixed spices
100 g (4 oz) Butter
1.5 Grated rind of lemon
14 g (1/2 oz) Dried yeast (Sachet easy-blend)
50 g (2 oz) Caster sugar
100 g (4 oz) currants
100 g (4 oz) Sultanas
50 g (2 oz) Mixed peel
50 g (2 oz) Flaked almonds
350 ml (12 fl oz) Hand-hot milk
2 (Beaten) Eggs

      This is a classic fruity cake; it is full of sultanas, & currants. Therefore, cut it into thick slices; spread some salted butter on top of it. Eat it as a satisfying treat.

      In a large bowl (mixing); sift in the flour, the salt and the mixed spices, after which rub in the butter. Then add the following ingredients; the lemon rind, sugar, yeast, currants, almonds, sultanas, the peel and then mix them well.


      After mixing up all the dry ingredients, make a well in the middle and pour in the eggs and the milk. With your hands or a spatula combine them all together, turning it into a soft dough, adding in just a tad bit of milk if need be. On to the floured surface, turn the dough on top of that, after flouring your hands, then you knead the dough for at least 10 minutes, or until the dough feels smooth and elastic. Add more flour to the surface as well as your hands if necessary to prevent the sticky dough from getting stuck to your hands.


      In 2 large bowls, after oiling them lightly and place the dough into it (after cutting the dough into 2 halves), covering it with a clean tea-towel or an oiled cling film. Place the bowls in a warm place (such as near an oven or a stove or a cabinet) and leave it for the next 2 hours or until the dough has risen and is double the size.


      After the dough has rested for 2 hours or till it has risen; flour your hands and the surface of where you going to be kneading the dough. Then remove the dough from the bowls and knead it for the next 2 minutes. Forming it into a rectangle or a square and place it in a 2 greased bread pan or a baking sheet trays.


      With a sharp knife, make a few diagonally shallow slits across the top, after which you cover it up again and like before leave it in the same warm place for 45-50 minutes or until the dough has risen and become double in size.


      In the meantime, heat the oven to 200 C. Once the bread has risen well, place the pan in the middle of the oven and bake it for 40-45 minutes.


      In order to check if the bread is done or not; test the pan by tapping it with your knuckles. If its sounds hollow it is done. For the Tea Bread to cool down put both of them on a wire rack before serving.
