2 x 400 g packs Ready to roast mixed vegetables

A pinch Dried Thyme or oregano

200 g (7 oz) Black Olives

3 Tbsp Olive Oil

350 g Pack of chilled Garlic Bread

3 Tbsp Dijon Mustard

3 x 6 bones-Trimmed. Racks of lamb

700 g (1 1/2 Lb) Spinach

700 g (1 1/2 Lb) Green beans

Sprigs to garnish Fresh Thyme

For Mashed Potatoes

6 ( boiled and mashed) Potatoes

50 g (2 oz) Butter

1 Medium Eggs

Directions
Coated with a simple yet delicious herb crust, this rack of lamb makes a dramatically brilliant presentation. Especially cutting into double chops for serving. Serve it alongside simple roasted seasonal vegetables, sauteed spinach & mashed potatoes. You have prepared for an elegant Christmas dinner party with minimal effort.

The oven should be preheated to 220 C mark 7. Then tip the vegetables into a roasting tin that is large enough to fit a whole rack of lamb in it. Sprinkling the roasting tin with herbs, & olive oil. Stirring in well, the ingredients and then putting it into the oven for about 10 minutes. |

Meanwhile, tearing off 1/3rd of the garlic bread. Whizzing the garlic bread in a food processor to make bread crumbs roughly, then tipping all of the bread crumbs on to a plate. (Freeze the remaining of the bread crumbs for use at a later time) |

Then spread mustard all over the side of the lamb with the fat on, then into the breadcrumbs press the mustard covered surface. Then season it. Cook the vegetables for 10 minutes, once they are cooked take them out of the oven and let them sit on the oven rack and put the lamb on top of them. |

After the vegetables have been placed underneath the lamb, put everything back into the oven. Then continue to roast the lamb for at least another 30 minutes or until the lamb is golden and cooked through. To check if the meat is done or not put a skewer into the thickest part of the meat- the juices should flow & should be pink. |

Put some water in a pan to boil, then cook the beans for at least 5-6 minutes. Drain them well. Also, fry the spinach in a little bit of garlic and set it aside once it's done. |

Then cut the racks into two mini joint bones, and then divide the meat, roasted vegetables and spinach among six plates. Garnishing each plate with thyme and serve with green beans. |

Along with that serve it with Mashed Potatoes! |
