I have made Chocolate Mousse before, but I had never really found a recipe that I really liked making. Here is a simple, easy and quick recipe to make deliciously amazing chocolate mousse.

In a large bowl, whisk the egg yolks with the caster sugar until the mixture is pale and creamy and beater leaves a trail when lifted. |

Melt the chocolate (breaking the chocolate into squares, and put it ina heatproof bowl. Then bring a small saucepan of water to the boil then removing it from the hear and placing the bowl on top. Leave the chocolate until it has melted before stirring it). |

As soon as it is soft, whisk it into the egg yolk mixture, until smoothly combined. |

Whisk the egg whites with salt in a clean bowl until stiff peaks form. Beat a little of the egg white into the chocolate mixture to lighten it, then fold in the rest of it. |

Divide the mixture between 4-5 small dishes or glasses; chill for 2 hours or until set. Decorate it with whipped cream. |
