Ingredients

Adjust Servings:
4 eggs Egg Whites
250 g (8oz) Caster sugar
1 Tbsp Cornflour
2 tsp Vinegar
1/4 tsp Vanilla essence
For the filling:
284 ml (10 fl oz) Double cream
2 (sliced) Bananas
1 small (cut into cubes) Pineapple
2 (peeled and sliced) Passion Fruit
2 (peeled and sliced) Peaches

      It is a meringue dessert with a crisp crust and soft, and light inside. However, it is usually topped with fruit and lots of whipped cream.

      Whisk the egg whites until stiff peaks are formed. Add the sugar, a tablespoon at a time, whisking until the meringue is very stiff. Whisk in the cornflour, vinegar and vanilla.

      Pile the meringue onto on baking sheet lined with silicone paper and spread into a 23 cm (9 inch) round. Hollow out the centre slightly and bake in a preheated oven to 150 C (300 F) for 1 1/2 hours.

      Cool, then remove the paper and place the pavlova on a serving dish. Whip the cream until the stiff, and fold in some of the fruit. Pile into the pavlova and decorate with the remaining fruit.
