225 g (8 oz) Button mushrooms
1 ½ Kg or 3 Lbs. Chicken pieces
1 Tbsp Plain Flour
450 ml Hot chicken stock
12 Shallots or button onions, peeled
2 Small branch Parsley, roughly chopped
2 Celery Sticks, roughly chopped

    There are way too many recipes and forms to choose from when it comes to making some yummy good tasting casseroles. From a creamy, hearty casserole with lots of meat and cheese to a lighter version when you don’t want a very heavy meal.

    As a cook, casseroles have changed my life. This is one of the bestest comfort foods out there which you should definitely try. It can feed a whole crowd and are perfect for either lunch or dinner.

    But enough about how awesome they are, its time for us to make some healthy, deliciously awesome chicken casseroles that will get you loads of compliments!

    Start by preheating the oven to 200°C or 400°F.

    Take a large saucepan, and add 2 tablespoons of olive oil to it and turn the heat on. Next, adding the chicken pieces and browning them a few at a time.

    As each batch of chicken pieces is done, drain them and set the pieces aside.

    Adding the shallots, celery and mushrooms to the same frying pan and frying them.

    Once done, put 1 tablespoon of flour into the saucepan and stir it into the remains of the oil, then use a little of chicken stock to mix this into a sauce.

    Slowly add the rest of the stock and gradually keep stirring. Next, adding the chicken pieces into the pan and putting it on medium heat until the whole mixture comes to a boil.

    Now warming your casserole by rinsing the casserole with hot water. Once done, transfer all of the cooked ingredients to the casserole, put the lid on and put it in the oven.

    Cook your casserole in the oven for about 45 minutes, then lower the heat down to 180°C or 350°F.

    Now, taking your casseroles out of the oven and add some parsley on the top. Once that's done, return the casserole to the oven for another 45 minutes to complete the cooking process.
