So why am I sharing low carb keto gelatin chocolate pudding today?
I myself am genetically and ectomorph (hard gainer). It doesn’t matter how much I eat, I am not able to gain much weight.
That makes some of my besties really really envious because they can’t seem to lose any!
Now, I have seen people lose weight by going for a high-fat, low carb diet also known as the keto diet.
You simply replace carbs with proteins and fats as a source of calories. This allows your body to start burning protein and fat for energy and hence, weight loss.
If you want to shed some of the weight, you need to give the keto diet a try. This recipe is for those of you who are on the keto diet but aching for something sweet!
This is an easy yet delicious recipe for low carb keto chocolate gelatin pudding that has helped me win back the affection of many many friends đŸ˜‰

Let’s start by heating a saucepan over medium flame. We are going to add our chopped almonds to it and roast them without oil for over 3 minutes. Once done, the will be slightly browned. Remove the saucepan from flame and transfer our roasted almonds to a bowl. |

Next, let’s add 1 cup of coca milk to the same bowl along with 2 tbsp. Of cocoa powder. Now, we are not using sugar here obviously so you can use 1 tbsp. Of stevia extract or 2 tablespoons of maple syrup, depending on your preference. Once added, gently whisk the mixture using a spoon. Make sure to mix all ingredients well so there are no lumps left. |

Now transfer the mixture to the saucepan and heat it over medium flame. It’s very important that you stir continuously so no lumps are formed during this stage as well. |

While our mixture is cooking, add 1 tbsp. Of gelatin to 2 tbsp. Of water and mix it thoroughly. Next, pour this mixture into the saucepan, switch off the flame, and gently stir it. |

Now it’s time to transfer our mixture into small ramekins. Sprinkle some chopped almonds on top and refrigerate the ramekins for about 30-45 minutes. |
