Baking a low carb keto banana bread might sound impossible but ITS NOT!

I know what you all are thinking and that is; “How in the world are you going to try to make banana bread that tastes like a banana without the bananas?”

Well, you will learn soon enough but I promise you is that it’s going to be a low carb (2g net carb / slice). It’s going to taste exactly like the real banana bread!

It’s actually kind of mind blowing how close it tastes to the “real thing”. In fact, it’s going to be so close that anyone you serve it to wouldn’t be able to tell that there are no bananas in it!

Especially, when you consider the fact that each slice only has 2g net carbs!

Ready to do some baking? Let’s get started!

Start by preheating the oven to 350 degrees

Take a large bowl and add 1 ½ cups of almond flour in it.

Next, let’s add half a cup of confectioners erythritol. It’s an amazing alternative for sugar in this case because it has 0 carbs and 0 calories.

To help our keto banana bread rise a little bit, let’s add ½ teaspoon of baking powder to the mix.

Add a little spice to our banana bread by adding ½ teaspoon of ground cinnamon. After this, let’s give the ingredients a solid whisk to thoroughly mix them up.

Now, take another bowl and add three large eggs in it. Let’s whisk them up.

Add 6 tablespoon of melted butter to the egg bowl.

Add 1/3rd of a cup of unsweetened vanilla almond milk to the mix along with 1/4th cup of sour cream.

To add a super rich flavor to banana bread and further sweeten it, you can add 1 tablespoon of calorie free maple syrup.

Remember that I said I am not using any bananas in this banana bread? Yup, let’s add some banana flavor to our bread by adding ½ tablespoon of banana extract along with 1 tablespoon of vanilla extract!

Whisk the liquid mixture thoroughly.

Add the dry ingredients from our flour bowl into the liquid bowl and mix it thoroughly. At this point, the batter should be looking good.

Take a 9 by 5 bread pan and line it with a little bit of parchment paper and spread it with a little bit of baking spray.

Add the batter top the pan and add some toppings of your choice on the top. You can add almonds, walnuts, or any other dry fruit you like.

Place the banana bread into the stove / oven and bake it for 40-45 minutes. I would highly recommend letting the loaf cool down or even sit for an entire night before digging in!
