Adjust Servings:
250 g (plus extra to grease) Unsalted Butter
200 g (7 oz) (minimum 70% cocoa solids) broken into small pieces dark chocolate
4 Tbsp Tia Maria or dark rum
125 g (4 oz) Golden Caster sugar
4 (plus 2 large egg yolks) Large eggs
1 Tsp Vanilla Extract
65 g (2 1/2 oz) sifted Plain Flour
1 level Tsp Ground Cinnamon
To dust Icing sugar

Gooey Chocolate Pudding-New year’s Dessert.

      This gooey dessert will make your new year lunch a massive hit, above all with its super ozzingly gooey centre. This dessert will be the star of the lunch party.

      Heat the oven to 200 C or mark 6. Lightly Greasing 10 x 150 ml (1/4 pint) coffee cups or bowls.


      In a bowl melt the butter and the chocolate together (put the glass bowl on top of gently simmering water), but make sure that the base of the bowl isn't touching the boiling water otherwise the mixture will burn. Immediately after the butter and chocolate have melted, take them off the heat and add the dark rum or Tia Maria. Stirring the mixture until it is nice, smooth and glossy.


      In the meantime; put together in a large bowl whole eggs, egg yolks, sugar and the vanilla extract. Then whisk these ingredients with a hand blender or a food mixer or whisk, until the mixture doubles in size- this process should take approximately 10-15 minutes to do. The mixture should somewhat look like a mousse consistency and should leave a ribbon-like trail when the whisk is lifted from the mixture.


      To this whisked egg mixture add in the melted chocolate. After whisking the chocolate in the egg, sift in the cinnamon and flour. Fold everything in carefully together using a large metal spoon.


      Using a hannah or a ladle divide the prepared mixture into cups or bowls. Then put them on a baking tray.


      Pop the cups or bowls into the oven for 10-12 minutes approximately, or until the edged around them are firm to the touch but are still a little runny in the middle. Taking the chocolate puddings and dusting them with icing sugar and serving them with ice cream or on its own.
