This oven-baked frittata is delicious and healthy!
Have you ever tried an amazing frittata? The perfect frittata; is creamy, and custardy, also full of vegetables. It is not dry, sponge-like or bland at all.
Frittatas are the eventual clean-out-the-fridge weeknight dinner or weekend brunch recipe.

Let’s start by preheating the oven to 200°C or 392°F. Then, Take a deep ovenproof dish (5cm deep, 26cm x 16.5 cm base) and lightly grease it. |

Next, we are going to cook our two potatoes. You can do that by piercing each potato 3-4 times with a bamboo skewer and placing it in a heatproof, microwave-safe bowl for 4-5 minutes on high (100%) temperature. Once cooked, they should be tender. Allow them to cool down a bit before cutting them in thin slices. |

Take a non-stick frying pan, add two tablespoons of olive oil and place it over medium heat. Add 1 chopped red onion to the pan and cook it for 3 minutes. Make sure to keep stirring so they don’t overcook. Next we will add pancetta and do the same thing, cook and stir it for 3 minutes. By now, our onions should be soft and our pancetta golden. We will add spinach to the mix and cook for 1 more minute. |

Combine onion mixture, tomatoes, and capsicum in a bowl. Arrange half of the potato, in a single layer in the dish that is going to be baked. Cover that layer with half of the onion mixture. Repeat with remaining potatoes and onion mixture. |

In another bowl, whisk 8 eggs with ½ cup of thickened cream. Add salt and pepper as required. Then gently pouring in the egg mixture over the vegetable mixture in the prepared dish. Add some parmesan and cheese on top to make our frittata extra delicious. |

Bake it for 30-35 minutes. You will know its ready when the egg mixture on top is set , lovely and golden. After taking it out, allow it to stand for 5 minutes and then serve your delicious oven-baked frittata! |
