    Now, I can skip any lunch. I can sometimes skip dinner too but I never ever compromise breakfast; because I will only finish strong when I will have a strong start!

    This is a keto recipe so it’s perfect for my friends who are on a keto diet and hate carbs, although crepes can be eaten with anything; once you try out this blueberry filling for a breakfast you’ll want to repeat!

    Take a bowl and use an electric hand mixer to mix the cream cheese and eggs until you have a smooth mixture

    Next, add the stevia, cinnamon, baking soda and salt to the bowl and mix

    Take a nonstick pan, add some butter or coconut oil and heat it. Start pouring in some batter and try to get a very thin layer. You should cook for 3 minutes and then flip the crepe and cook for another minute. Once satisfied, remove the cooked crepe.

    Next, we are going to make the filling by combining cream cheese, vanilla extract, and powdered erythritol. Use an electric mixer to stir until its really creamy.

    Add the filling, cinnamon, and blueberries to your crepes and either fold or roll them up.
