Ingredients

Adjust Servings:
45 g (3 oz) Softened Butter
1 (medium) Eggs
100 g (3 1/2 oz) Caster sugar
250 g (9 oz) Plain Flour
1/2 tsp Baking Powder
1/2 tsp Vanilla Extract
A selection of coloured ready to roll fondant icings, royal icing, food colourings and edible decorations.

      These delicious Christmas cookies, are all that you would want as a treat this Christmas eve. With the sweet base and the colourful toppings, these cookies will make your festivities even more delightful.

      With a wooden spoon in a large bowl, cream the butter and the sugar together until they are fully combined and forms a smooth mixture.
      Then in to the mixture beat in the vanilla extract and the egg. In a bowl combine the sifted flour and the baking powder. To make a soft dough tip it out on to the slightly floured surface and knead it gently. Then shaping the dough into a disc and with clingfilm wrap it up. For 1 hour chill the dough until it firms up.

      Heat the oven to 180 C or mark 4. Then roll out the dough on to a lightly floured surface, until it is 5 mm (1/4 inch) in thickness.
      Then with Christmas cookie cutters stamp out the shapes, and then if essential re-roll the trimmings. If you want to hang the cookies as decorations, use only the skewer to make a 5 mm (1/4 inch) hole in each one of them. On two non-stick baking trays, place the cookies. Let them bake for 10-15 minutes until the cookies are nice and golden and have risen. After they have risen allow them to cool down.

      Once the cookies have cooled down completely, with the help of different icing fondant (coloured) or royal icing decorate them.
