Ingredients

Adjust Servings:
2 x 225 g Chicken breast fillet
1 Tbsp Olive Oil
1 finely chopped Garlic Cloves
300 g Mixed Mushrooms
A splash of it Good White Wine
2 large handfuls Baby Spinach
150 ml Double cream
1/2 bunch of it, leaves only, roughly chopped. Tarragon
To Taste Salt and Pepper

      Its full of flavours and poaching the chicken keeps it nice and moist. Most supermarkets now stock up on some great wild mushrooms, so be adventurous and get some exotic looking ones.

      Bring a large saucepan of water to boil, then sliding in the chicken. Lower the heat until the water is just 'boiling' and not vigorously boiling. Let the chicken cook for 12 minutes, by which time it should be fully cooked through.

      Meanwhile, heat the oil in a large frying pan over a medium to high heat. Add in the garlic and cook it for about 30 seconds. The roughly chop any large mushrooms and throw them into the pan, to give them a head start for about a minute or two before adding the rest of the mushrooms and cooking for another minute.

      Increasing the heat to maximum, then pour in the white wine and let it bubble for a bit to almost nothing. Drop in the spinach and stir until wilted. Pour in the double cream, then bringing it to a boil and letting it simmer for about 1 minute. Adding the chopped tarragon and removing the pan from the heat.

      Check the chicken; whether it is cooked all the way through by slicing into the thickest part of the breast: the meat could be white all the way through and the juices should be running clear and not pink. Remove to a plate, draining off as much liquid as possible. Season with salt & pepper, then place on two plates and pour over the deliciously creamy sauce.
