4 (finely chopped) Shallots
3 Tbsp Olive Oil
700 g (1 1/2 Lb) Mixed Mushrooms such as crimini, chestnut and portobello.
2 (sliced) Garlic Cloves
2 Tbsp Brandy
6 Tbsp Double cream
100 g (4 oz) Butter
2 Tbsp ( plus extra to garnish) Fresh curly parsley
1/2 Tbsp Lemon Thyme leaves
8 slices Ciabatta

    Who can ever resist these creamy mushrooms on toast, made decadent and deliciously smooth with a splash of brandy? Therefore, this recipe is to die for as this is the ultimate comfort dish.  Earthy mushrooms piled on toast topped with some delicious ciabatta toasts.

    In a frying pan add in 2 Tbsp of oil and put the shallots in the frying pan. Then for 5 minutes gently put the garlic in until it is softened.

    Then to a pan add 50 g (2 oz) of butter until it starts to foam, then tip in half of mushrooms in the pan. Over a high flame fry the mushrooms until they are brown and the liquid has evaporated- the mushrooms will steam rather than brown if you cook them all at once. Remove the mixture; of mushrooms and shallots and setting them aside. In the remaining butter cook the remaining mushrooms.

    To the pan return the mushrooms and then sprinkle the brandy on top of the mushrooms. Igniting a match to burn off the alcohol carefully and then letting the flames die down. After this stir in the thyme, the parsley and the cream and letting it heat up for 2 minutes until it starts to bubble.

    In the meantime, taking a griddle pan and heating it up until its hot. Brushing the remaining oil on the Ciabatta slices and griddle on both sides. Among 8 plates dividing the ciabatta slices, and topping them with the mushrooms and garnishing with parsley. Immediately serve.
