Ingredients

1 Pound Chicken Breasts (Remove Skin)
1 Tbsp Dried Oregano
1 Tbsp Smoked Paprika
1 Tbsp Kosher Salt
1 Tbsp Freshly Ground Black Peppers
6 small sized Small Bell Peppers
2 medium sized Sliced Jalapeno Peppers
½ Cup Chopped Green Onions
2 Tbsp. Lemon Juice
As Required Chopped Parsley
1 small Red Onion
A hand full Arugula

      I have got a simple, easy and delicious recipe for my fans who are following the keto diet.

      Today, I am going to help you make spicy baked Mediterranean chicken cooked with super healthy veggies. This will have you licking your plate!

      One of the reasons I absolutely love this recipe however, it is how easy it is to bake as few or as many chicken breasts you need. The process remains the same. 

      You can also combine this Mediterranean chicken with other dishes like boiled rice, mashed potatoes or pasta.

      Enough talking, let’s start cooking!

      Start by preheating your oven to 200°C or 392°F.

      Take a bowl and put paprika with oregano, ground black peppers, kosher salt, and mix them.

      Next, let’s trim the excess fat from the chicken breasts and coat them generously in the mixture of spices.

      Now grease the baking tray you are going to use with some cooking oil, place the chicken breasts on it.

      Placed the chopped vegetables around the chicken breasts and add a sprinkle of lemon juice on top

      Use an aluminium foil to cover the tray and let’s bake it for 35 minutes.

      Awesome! Now, remove the foil and cook the chicken breasts for 5 more minutes under the broiler.

      Once done, let the chicken cool down a bit and slice it up using a sharp knife.

      Before serving, add some chopped parsley on top. Your spicy, flavorful Mediterranean chicken is ready!
