1 Large Aubergine
2 tbsp Olive Oil
2 - 3 Finely chopped Shallots
2 - 3 Finely chopped Garlic Cloves
1 (peeled, deseeded and finely chopped) Tomato
1 pinch Rock salt
1 pinch Black Pepper
1 Lemon Juice

Aubergine caviar is deep, rich purple and full of flavour. 

Although it sounds sophisticated and complex but its an incredibly healthy and easy dish to make and is perfect to serve as spread for bread or crackers.

This one is for all the healthy people and vegetarians out there!

Steps

First thing we need to do is to prick the aubergine/eggplant with a fork, do it several times.

Once done, let’s bake it at 180°C or 350°F for 35 - 40 minutes, until it becomes tender in its entirety

Now, let’s take it out of oven and let it cool down. Once it's cool enough, cut it in half and scoop out the flesh.

Pour the olive oil in the frying pan and add the shallot and garlic to it. Cook until its translucent.

Next, let’s drain and mix it in with the aubergine/eggplant.

Add in the finely chopped tomatoes and seasoning, add salt, black pepper and lemon juice to suit your taste.

Finally stir in some fresh olive oil before serving it for your friends, family members or guests!
