300 ml (10 fl oz) Whipping cream

25 g (1 oz) Flaked almonds, toasted
Directions
One of the quickest, easiest and most delicious desserts you can make when you are short on time is Apricot Fool.
Apricots are one of my favourite fruits that I have loved since childhood. It’s useful for so much more than just making jams or eating as snacks.
Apricot Fool is a proof of that so let’s give this a try!
I love having some biscuits alongside the apricot fool, just so I can dunk them in it and eat. It’s one of the best combinations ever! We hope this helped and your apricot fool experiment was a success.

Start by draining the apricots |

Cut the apricots into quarters so they are easier to cook |

Put the apricots, sugar and lemon juice in a frying pan and slowly cook it, adding a little bit of cooking water until it's reduced to a puree. |

Whip the cream until it becomes soft, then fold in the apricot puree. |

It’s done! Transfer the fool to serving dishes and sprinkle your favourite dry fruits on top of it. |
