1 Lemon Juice

Just a tad bit of it. Butter

1 kg (2lbs) Peeled and sliced. Cooking apples (ideally Bramleys)

225 g (8oz) Caster sugar

6 (optional) Cloves

2 Ready-rolled shortcrust pastry

A little for glazing Milk

a handful Dried cranberries

This apple pie is amazing! It is divine and delicious at the same time!

Put the lemon juice into a bowl half-filled with cold water. Preheat the oven to 220°C/425°F/ Gas Mark 7. Grease the pie-dish lightly with the butter. |

Peel, core and slice the apples, dropping each piece into the lemon water. When all the apples are ready, drain them briefly and put them in a saucepan with all but 1 tablespoon of the sugar. Put a lid on the pan and cook over medium heat for 6 - 8 minutes, until the apples begin to lose shape. After the apples have softened add the dried cranberries to the mixture. |

Meanwhile, divide the pastry ίη half, roll each piece to form a circle a little larger than the dish, and lay one piece in the dish, leaving it untrimmed. |

When the apple is ready, lift it from the pan with a slotted spoon and spread it οη top of the pastry. |

Place the cloves equally round the dish and push them into the apple. With a pastry brush, brush a little milk round the pastry οη the edge of the dish, then lay the other piece of pastry οn top. |

Press the edges together, trim off the spare pastry and either use your fingers to flute the edge or use the tip of a knife to make a pattern. Make a small hole in the middle of the pie to let steam escape. If you want to use the spare pastry to make a decoration of leaf-shapes, do so, sticking these down with a little more milk |

Finally, paint the whole of the top with milk before putting the pie in the oven to cook for 25 - 30 minutes, or until the top is golden brown. Take it out of the oven and |
